Ingredients:

  • 2 lbs pork belly or shoulder, cut into cubes
  • 1 cup soy sauce
  • 1 cup vinegar
  • 1 cup water
  • 1 head garlic, minced
  • 1 tsp black peppercorns
  • 2 bay leaves

How to Prepare the Ingredients

  1. Cut the pork belly or shoulder into cubes.
  2. Mince the head of garlic.
  3. Measure out 1 cup of soy sauce, vinegar, and water.
  4. Crush the black peppercorns.

Cooking procedure:

    1. In a large pot or Dutch oven, combine the pork, soy sauce, vinegar, water, garlic, black peppercorns, and bay leaves. Bring to a boil over high heat.
    2. Lower the heat to medium and let it simmer for 45 minutes to an hour or until the pork is tender.
    3. Once the pork is tender, remove it from the pot and set it aside.
    4. Increase the heat to high and let the sauce reduce until it thickens to your desired consistency.
    5. Return the pork to the pot and simmer for another 5 minutes.
