Prepare the ingredients
- Wash the chicken thoroughly and cut into serving pieces. Set aside.
- Peel the green papaya and remove the seeds. Cut into wedges or cubes. Set aside.
- Peel and slice the ginger into thin strips. Mince the garlic. Dice the onion. Set aside.
- Wash the spinach leaves and set aside.
Cooking procedure:
- Heat the oil in a pot and sauté the garlic, ginger, and onions until aromatic.
- Add the chicken and cook until browned on all sides.
- Add the fish sauce and stir.
- Add the water and bring to a boil. Skim off any impurities that float to the surface.
- Add the papaya and simmer until tender.
- Season with salt and pepper to taste.
- Turn off the heat and add the spinach. Stir until the spinach is wilted.
- Transfer to a serving dish and serve hot with rice.
