Carrotless Pork Menudo Recipe
- Mix the pork, pork liver, soy sauce, into a bowl and suqeeze in all the calamansi juices.
- Marinade for a minimum of 1 hour then use a strainer to drain the marinade out of the pork and liver.
- In preheated cooking pot or pan, sauté the pork and liver in onion and garlic with cooking oil until the pork is half cooked. It takes 10 minutes or less.
- Add the tomato sauce, potatoes, hotdogs, and water. Mix all ingredients now in cooking pot carefully. Put the lid on and wait until boiling.
- After 2 minutes of boiling, turn down heat to low, and simmer for 15 minutes.
- Add the bay leaves, sugar, black pepper, and salt Simmer for another 15 minutes.
