  • 1 tbsp garlic, minced
  • 1 tbsp onion, chopped
  • 1/2 kg pork, chopped into small cubes
  • 125 g pork liver, chopped
  • 1/4 cup soy sauce
  • 2 tbsp calamansi, raw juice
  • 200 g tomato sauce
  • 1 cup potato, diced
  • 1/2 cup hotdogs, sliced diagonally
  • 1/2 cup water
  • 1 tsp sugar
  • 1 tsp black pepper, ground
  • 1 tsp salt

Carrotless Pork Menudo Recipe

  1. Mix the pork, pork liver, soy sauce, into a bowl and suqeeze in all the calamansi juices.
  2. Marinade for a minimum of 1 hour then use a strainer to drain the marinade out of the pork and liver.
  3. In preheated cooking pot or pan, sauté the pork and liver in onion and garlic with cooking oil until the pork is half cooked. It takes 10 minutes or less.
  4. Add the tomato sauce, potatoes, hotdogs, and water. Mix all ingredients now in cooking pot carefully. Put the lid on and wait until boiling.
  5. After 2 minutes of boiling, turn down heat to low, and simmer for 15 minutes.
  6. Add the bay leaves, sugar, black pepper, and salt Simmer for another 15 minutes.
  7. Turn off heat and serve hot with rice. Enjoy your Pork Menudo Recipe!
